In reality this dish is actually just collard greens, but in places like Kenya and Tanzania, they like to refer to it as sukuma wiki. As for the dish itself, it's the common dinner eaten by Kenyans usually with ugali or chapati. Meat is often a rarity for most Kenyans, so families in Kenya usually opt for vegetable dishes they can grow and harvest easier in their own backyard. Coincidentally, sukuma wiki means to push the weak, or you can also interpret it as to keep a family going that is poor or short on resources. That's part of the reason why the dish is so important, because it keeps many families going who are just barely getting by. Sukuma Wiki has been eaten for thousands of years, and it more than likely will continue be eaten for thousands more. If you want to try out Sukuma Wiki, you can take a look at this recipe. It's really quite simple though, as sukuma wiki is lightly salted sauteed collard greens or kale, or a variety of other vegetables. Anyways, I mostly just wanted to make this post to share a bit of info on this dish.
