Don't Knock It Till You Try It

Githeri is one of my top favorite dishes my dad makes. Because my father is Kenyan, my family has got to try quite a few different dishes from his family background. Githeri is just one of those dishes my dad happened to share with us. My dad actually just made this one out of the blue so I was surprised when it appeared on the dining table. By the end of the meal though I was scraping out the remains from the serving bowl. Githeri is popular throughout all of Kenya and in other places across Africa. The dish usually consists of 2 main ingredients: Corn and Beans. They are mixed and boiled together until ready to be served. Githeri has been very popular with secondary students especially in Kenya since the 1920s and is often served in Kenyan Hotels as well. Githeri is also known to have multiple health benefits because it contains no sugar and vegetables are often added to the dish.
