The Best Noodle Dish EVER! (Besides Chow Mein)

The first time I saw this dish I fell in love with it. Mei Fun is A dish popular in both and Singapore and in Southern China. Mei Fun consists usually of fried thin noodle and chicken, but a variety of different ingredients have been added to change texture, flavor, and so on and so forth. Common ingredients to add can include egg, salt, and wheat starches. What may come as a surprise to some is the fact that many people in both Singapore and China add Indian golden curry spice to this dish. Indian spices have actually become very popular in Chinese cuisine today and can be found in many other dishes as well. Mei fun has many different forms as well, including shrimp mei fun, pork mei fun, and Taiwanese Chow Mei Fun.
